Fennel Salad
Pair with Glenarty Road Vermentino – afresh and crisp, easy-drinking white with an inviting backbone of green pear, slate, sea spray and stonefruit. A salty clean crunch to balance the truffle and honey. Situated in Karridale, the makers have a grape-toglass philosophy.
+ Maidenii Dry Vermouth – crafted with produce from growers.
Cabbage Dish
Pair with Frankland Estate Malo Halo Chardonnay – this Chablis-style drop will cut through the sage butter and brighten the cabbage with its minerality. It’s pushed through full maloactic fermentation to soften its acid and have an intriguing nutty and soft mouth feel, which pairs well with Great Southern red apple’s acidity.
Radicchio Salad
Pair with Lonely Shore Pinot Noir – sweet fruit aromas of red and dark cherry and cinnamon pie crust bounce off the spice of the radicchio and earthiness of walnuts. A palate of plum and sage, with tart rhubarb, cut through and enhance the shallot and balsamic. This salad screams pinot noir and this is a lovely expression from WA’s southern end.
Orange Parfait
Pair with Cullen Dancing in the Moonlight Rose – juicy fruit on the palate with lots of texture, pear and orange blossom, with savory thyme on the nose, mimicing the fruit-meet-herbal tones of the fennel-spiced citrus/chocolate/coffee.
+ Castle Rock Estate Muscat –finishes on the palate with orange rind and marmalade.
