Air-Fryer Yellow Curry Roasted Cauliflower
(GF, VEGAN)
Australia’s air fryer market is estimated to be worth over $58 million according to choice.com.au!
Recipe supplied by Buy West Eat Best, created by Mouthful Studios
Serves 4
Ingredients
1 large cauliflower, with leaves attached
1 jar of yellow curry paste
1 brown onion
2 large tomatoes
1 can of coconut cream
Coconut flakes and coriander leaves, to serve
Method
1. Bring a large pot of salted water to boil.
2. Flip your cauliflower upside down and make a small cut in the centre of the stalk, aiming to cut approximately 1–2cm wide and down to the centre of the cauliflower. Turn your knife 90º and repeat, making a X shaped cut through the centre (this will help your cauliflower cook evenly).
3. Place the cauliflower in the boiling water and boil for 5–7 minutes. Remove the pat dry well, then leave it to cool and dry further for another 10–15 minutes.
4. Roughly chop the onion and tomatoes and place in the bottom of the air flyer liner/tray.
5. Stab your cauliflower across the top several times with a small knife, and then rub over the jar of curry paste, aiming to fill in all cracks and crevices as best as you can. Place the cauliflower on top of the onions and tomato and cook in the air fryer for 15 minutes.
6. After 15 minutes, open up the air fryer and pour the coconut cream over the cauliflower. Cook for a further 20 minutes, until the cauliflower is golden and brown across the top and the leaves are gnarly and golden.
7. Remove the dish from the air fryer and sprinkle over the coconut flakes and coriander leaves. Serve with rice and your favourite flatbreads.
* Note: For this recipe you will need an air fryer tray/liner or a small dish that can fit inside your air fryer.
